On a balmy Saturday evening in Mont Kiara, Kuala Lumpur, an exciting culinary initiative unfolded at Evoke Gastrobar, a hidden gem nestled within a condominium. Celina Wu, the owner of the establishment, succinctly outlines her vision: “There are a lot of jobless chefs in the market right now. Many don’t want the burden of starting their own restaurants due to the substantial capital required.”

Wu’s initiative is all about providing these talented chefs with the opportunity to host chef’s table dinners. Launched alongside co-founder Ryan Teh in June, this project aims to support culinary professionals facing hardship or unemployment.

In an industry where younger chefs often take a backseat, Wu is determined to spotlight those who usually remain in the shadows. “I want to give younger chefs a chance to step into the limelight,” she explains. This platform not only allows chefs to curate exquisite menus but also encourages them to step outside their comfort zones and engage with diners on a more personal level.

Chef Julia Ung, who participated in Evoke’s first chef’s table dinner, emphasizes the significance of this initiative. For freelancers like her and her partner, Ng Hun Yan, it offers a unique chance to flex their culinary muscles without the constraints of a formal restaurant environment. “This kind of opportunity is invaluable for people in our situation,” she notes.

A Creative Playground for Freelancers

For many chefs today, the freelance route means juggling numerous projects—from private catering to pop-up events. “We’ve been approached for collaborations, but the lack of a restaurant space limited us,” Ung shares. The chef’s table dinners at Evoke provide not just a venue but a supportive framework for chefs to experiment, innovate, and ultimately create memorable dining experiences.

Wu recounts her own struggles when she first opened her restaurant, realizing how challenging it is to generate new concepts on-the-fly. Her experience led her to consider how she could provide a nurturing space for other culinary creatives. “When we started out, we had plenty of trial and error. It would have been easier if we had a platform to test ideas without enormous financial pressure,” she reflects.

Expanding the Vision

Wu’s ambitions extend beyond just hosting dinners. She envisions a multipurpose space where freelance chefs can tackle larger catering gigs without the burden of finding their own kitchen. “If someone secures a 30-person catering opportunity, they can rent our space at a minimal cost,” she explains. It’s all about fostering community and collaboration within the culinary landscape.

Notably, Evoke Gastrobar has a distinct revenue model that includes food delivery, making it an attractive location for chefs looking to dive into this increasingly popular sector. “I can help chefs establish their presence on food delivery platforms, allowing them to earn while they wait for more stable job opportunities,” Wu shares.

The Selection Process

The selection of chefs for the collaboration dinners relies on Wu’s extensive network as well as her search for talent on social media. “The culinary industry is oversaturated, and numerous chefs are actively seeking job opportunities. I often find potential candidates through industry-driven social media pages,” she notes.

Wu is transparent about her approach: while she does take a small commission from the dinners, the primary goal remains the empowerment of local culinary talents. “Aside from supporting my friends, it’s about allowing these chefs to carve out their own identities and styles,” she elaborates.
